Beef Weasand
Beef weasand is the muscular wall of the bovine oesophagus, stripped of its inner mucosal lining and trimmed for food use. In the trade it is also called beef gullet or oesophagus meat. Offal Exp supplies it frozen, from cattle slaughtered and processed in Argentina at our SENASA-approved plant in Burzaco.
What beef weasand is
The weasand is the tube that runs from the throat to the rumen. Once the outer serosa and the inner mucosa are removed, what remains is a clean, dark, strap-like muscle. It is dense, low in fat and high in protein, and it holds its shape well through grinding, cooking and drying. Because it is a working muscle rather than an organ, it behaves in production more like lean trim than like liver or kidney.
Buyers usually specify whether they want the weasand opened or closed. Offal Exp also lists closed weasand separately, so state which format you need when you request a quotation.
Applications
- Meat processing — as a lean protein input in sausage, emulsified products and canned meat
- Pet food and pet treats — dried or twisted weasand is a common single-ingredient chew
- Foodservice in markets where oesophagus meat is a traditional cut

Frequently asked questions
Is beef weasand the same as beef gullet?
Yes. Weasand, gullet and oesophagus all describe the same part of the animal. Different markets favour different names, and specifications sometimes distinguish between the trimmed muscle and the whole untrimmed tube, so confirm the trim standard when ordering.
Where does Offal Exp’s beef weasand come from?
From cattle raised and slaughtered in Argentina. It is processed at our cutting plant and coldstore in Burzaco, Buenos Aires, which operates under SENASA inspection as Establishment No. 4407.
Is it supplied chilled or frozen?
Export orders are supplied frozen. Chilled supply is available within the Argentine domestic market.
Can beef weasand be used for dog treats?
Yes, and it is one of the more common uses. The muscle dries into a firm chew and is naturally low in fat, which is why pet treat manufacturers buy it. Tell us at the quotation stage whether the material is destined for human consumption or for pet food, because the trim standard and the required certification differ.
What information do you need to quote?
Product and format (opened or closed), volume, destination country and any certification your market requires. We reply with a price and the full specification sheet.
