Beef Heart 70VL
Beef heart 70VL is bovine heart muscle trimmed to approximately 70 percent visual lean. Offal Exp supplies it frozen from Argentine cattle, processed at our SENASA-approved plant in Burzaco, Buenos Aires.
What 70VL means
VL stands for visual lean: the estimated proportion of lean muscle to fat, judged visually against agreed standards rather than by chemical analysis. A 70VL heart product carries more of the surrounding fat, valve and vessel material than a closely trimmed one. It is priced accordingly and is normally bought as a processing input rather than as a foodservice cut.
We also produce beef heart 95VL, which is trimmed much closer. If your specification is written in chemical lean rather than visual lean, tell us at the enquiry stage so we can confirm what we can meet.
Why buyers use it
Heart is dense, deep red, iron-rich muscle with very little intramuscular fat once trimmed. It behaves in production more like lean beef than like soft organ meat, which makes it useful wherever colour and protein are wanted at a lower cost than skeletal muscle.
- Meat processing — sausage, emulsified products and canned meat
- Grinding blends where deep colour and high protein are wanted
- Pet food manufacturing
- Foodservice in markets where heart is a traditional cut, cubed or sliced

Frequently asked questions
What does VL mean on a beef heart specification?
Visual lean — the approximate percentage of lean muscle assessed by eye against an agreed standard. 70VL is a less closely trimmed product than 95VL and carries more fat and vessel material.
What is the difference between 70VL and 95VL beef heart?
The trim level. 95VL has more of the fat, valves and large vessels removed, so it yields more usable lean per kilo and costs more. 70VL is generally the more economical choice for processing applications.
Is the heart supplied whole or opened?
Trim and presentation vary by order. Tell us how you intend to use the product and we will confirm what we can supply against your specification.
Where does it come from?
Argentine cattle, processed at Establishment No. 4407 in Burzaco, Buenos Aires, under SENASA inspection.
Can it be used for pet food?
Yes. State at the quotation stage whether the material is for human consumption or pet food, because the trim standard and the certification your market requires will differ.
