About the product

Beef kidney is multi-lobed, firm and dark, with a distinct flavour that is much stronger than liver. It is a traditional cut in British, Iberian and Latin American cooking — steak and kidney, riñones al jerez, riñón a la parrilla — and it is bought by people who already know they want it.

The tray format exists because that shopper is buying a single meal, not a carton. Packing at the plant rather than in the store gives consistent portion weight, a clean pack presentation and a labelled unit that moves straight to the shelf. It also removes the handling of a strong-smelling raw offal from the retail environment, which is a real consideration for supermarket buyers.

What is the difference between the tray and bulk kidney?

The tray is a portioned retail unit packed at the plant and intended to go straight to the shelf. Bulk kidney is supplied in cartons for buyers who portion, process or repack themselves.
