Beef Paddywack
Paddywack is the nuchal ligament, the thick elastic cord that runs along the top of the neck and carries the weight of the animal head. Its anatomical name is the ligamentum nuchae. Offal Exp supplies it frozen from Argentine cattle processed at our SENASA-approved plant in Burzaco, Buenos Aires.
What paddywack is
Paddywack is not muscle and it is not tendon in the ordinary sense. It is elastic connective tissue, pale yellow rather than white, and it behaves differently from every other item on an offal list. It stretches, it resists cutting, and it does not soften with normal cooking the way collagen does. That is precisely why it is valuable.
Dried, it becomes hard and fibrous and lasts a long time under chewing, which has made it a mainstay of the natural pet chew market. Buyers in that trade often ask for it by name and will specify length and thickness bands.
Applications
- Pet chews and natural dog treats — the dominant use
- Collagen and gelatin extraction
- Traditional food use in some Asian markets, where it is slow-cooked

Frequently asked questions
What part of the cow is paddywack?
The nuchal ligament, running along the top of the neck from the skull to the shoulder. It supports the weight of the head, which is why it is so elastic and tough.
Why is it called paddywack?
The name comes from the English butchery trade and is now the standard commercial term in the pet treat industry. It is also sold as backstrap or beef tendon in some markets, though beef tendon properly refers to a different tissue — see our beef tendon listing if that is what you need.
Is it for human consumption or pet food?
Both markets exist. The trim standard and the certification required differ between them, so tell us the intended use when you enquire and we will quote against the right specification.
Where does it come from?
Argentine cattle, processed at Establishment No. 4407 in Burzaco, Buenos Aires, under SENASA inspection.
Can you supply to a length or thickness specification?
Tell us the bands you need with your enquiry. What we can run is confirmed on the specification sheet issued with the quotation.
